Solanum lycopersicum, or, the tomato, originated in South America, and is part of the poisonous nightshade family. Tomatoes were brought back to Europe with the Spanish discovery of the Americas; however, it did not gain widespread acceptance as an edible fruit by Europeans until considerably later.

Tomatoes are generally considered acidic (especially older, heirloom varieties), and as such, may be water bath canned; however, when made into sauces or used in conjunction with other vegetables, they should be pressure canned.
